Ramadan, the importance of fasting, food and family.
Food is considered essential during Ramadan, not only because it is necessary to sustain the body but also because it plays an important role in the cultural and religious practices of the month. Fasting is as important as the coming together over “iftar” with family and friends. Ramadan is a lot more than praying and fasting but when the fasting is over there are so many wonderful meals and beverages to remind you of what life is all about.
Ethiopian Cuisine
Ethiopian cuisine is known for it's spicy flavours and unique cooking techniques. From it's close proximity to the Middle East, it's short colonization by Italy and its indigenous Jewish community, there are many reasons as to why this is a gastronomical melting pot. Ethiopia is more than the birthplace of coffee. It is the land of over 80 different ethnic languages, demonstrating a diverse relationship with food, culture and history.
Ancient Roman Cuisine
Ancient Rome played an important role in the development of Italian cuisine, such as pasta techniques, olive oil use and grape cultivation for wine making. It cannot be considered the sole birthplace of Italian cuisine. As an overview, Italian cuisine is the result of a rich and diverse culinary heritage that has evolved over centuries, with great influence from the oldest surviving cookbook in Roman history.
Bread History - Bread Science
The ancient Egyptians are credited with developing the first leavened bread (made of yeast to rise) around 3000 BC. They discovered that mixing flour and water together and leaving it to sit for several days would cause wild yeasts to start fermenting, resulting in a risen dough. In Roman times, finely milled flour of quality wheat would have been for the rich and bran like flour would have been used by a poorer society.
